Rich in protein and fiber, lentil soup is both delicious and healthy.

It is quite simple to prepare.


Ingredients:

1 cup Good Morning red lentils
1 onion
1 carrot
2 cloves of garlic
1 tbsp tomato paste
1 tsp cumin (optional)
1 tsp salt (to taste)
1 teaspoon of black pepper
4 cups of water
2 tbsp olive oil


Preparation:
First, wash the lentils well and keep them in water for 10 minutes. This also allows the lentils to be cleaned and cooked more quickly. Finely chop the onion and garlic and grate the carrot. Add olive oil in a pot and fry the onion. After frying the onions until translucent, add the garlic and fry for a few seconds. Add the carrot and stir for a few minutes. Then add the tomato paste, mix and cook for a few minutes. Add the rinsed lentils and water to the pot.
After the water boils, cover and cook on medium heat for 20-25 minutes.
After the lentils and vegetables have softened, add cumin, salt and pepper. Stir and cook for another 5 minutes.
Your soup is ready! You can serve the delicious lentil soup hot, garnished with mint or lemon.
